Tres leches cake, or “three milks cake” or “three milks bread”, is a sponge cake soaked in three kinds of milk: evaporated milk, condensed milk, and heavy cream.
Three Milk Cake
Ingredients for cake:
- Egg whites – 6
- Egg yolks – 6
- Ground sugar – ½ cup
- Flour – 1 cup
- Vanilla essence – 1 tsp
Method:
- Beat egg whites and ¼ cup sugar in large mixer bowl until stiff peaks form.
- Combine egg yolks and remaining sugar in medium bowl, beat until light yellow in colour.
- Fold egg whites mixture and flour alternately into egg yolk mixture.
- Add vanilla essence.
- Pour into prepared pan.
- Bake in preheated oven on 375º F, 180º C, or Gas Mark 4.
- Grease and flour 9 inch spring form pan for 15 to 20 minutes or until just golden and wooden pick inserted in centre comes out clean.
- Remove from oven to wire rack.
Ingredients for filling:
- Condensed milk – 410 gm
- Whipped cream – 1 cup
- Evaporated milk – 5oz
- Orange juice or fresh milk – ¼ cup
- Vanilla essence – 1 tsp
Method:
- Combine condensed milk, half cream, evaporated milk, orange juice or fresh milk and vanilla essence in medium bowl, stir well.
- Prick top of cake thoroughly with wooden pick.
- Pour this mixture over cake.
- Let stand for 30 minutes or until cake absorbs the mixture.
- Remove side of pan.
- Beat cream, sugar and vanilla essence in small mixer bowl until stiff peaks form, spread over top and sides of cake and serve.
