Coffee cake is a most favorable cake in all around the world. Coffee cake serve as part of a breakfast or can be eaten during coffee break. These cakes sometimes have a crumbly or crumb topping called streusel or a light glaze drizzle.
Easy Coffee Cake Recipe
Flour – 150 gm
Butter – 150 gm
Egg – 3
Baking powder – 1 1/2 tsp
Sugar – 150 gm
Milk – 2 to 3 tbsp
Ingredients for Icing:
Icing sugar – 300gm
Butter – 150gm
Coffee – 2 tsp dissolves in 2 tbsp milk
Beat butter, coffee mixture and icing sugar until light and fluffy.
In a bowl, put butter and sugar; beat with electric beater until it becomes cream.
Take another bowl and strain flour and baking powder.
Now add eggs one by one with 1 tbsp of dry mixture and beat well.
Now add remaining dry mixture and beat on low speed or fold with spatula, along with milk.
Transfer this mixture into two 8” cake pans and bake in preheated oven at 180ºC, 350ºF and Gas Mark 4 for 20 to 25 minutes. When it’s done, let it cool down completely.
Then apply icing on both layers and decorate.
Then apply crushed ginger biscuit on around the cake and serve with coffee or tea.
