Nandos Coffee Cake

Ingredients:

  1. Flour – 150gm/6 oz
  2. Eggs – 4
  3. Vanilla essence – 1 ½ tsp
  4. Granulated sugar – ½ cup
  5. Brown sugar – ½ cup
  6. Baking powder – 1 ¼ tsp
  7. Butter – 200gm/8 oz
  8. Grated chocolate – 125gm/5 oz
  9. Coffee – 1 tsp
  10. Ingredients for cheese frosting:
  11. Icing sugar – 2 cups
  12. Soft butter – 100gm/4 oz
  13. Coffee – 1 tbsp (Dissolve in milk or water )
  14. Cream cheese – ½ cup/100gm

Beat together Icing sugar, butter, coffee and cream cheese together until foamy.

Ingredients to soak cake:

  1. Milk – ½ cup
  2. Icing sugar – 2 tbsp
  3. Coffee – 1 tbsp

Dissolve icing sugar and coffee in milk and moist the cake.

Method:

  • Preheat oven to 180c. Butter two 9 inch sandwich pans.
  • In a bowl, beat together 200gm butter with brown sugar, granulated sugar and vanilla essence until creamy.
  • Then add 1 egg at a time alternating sieved flour and baking powder.
  • When the mixture is form, set the beater on slow speed and beat in the melted chocolate mixed with coffee.
  • Spoon the batter into two 9 inch greased pan and bake for 45 minutes.
  • Cool the cake completely in the pan.
  • On serving platter, place one layer of cake. moist the bottom layer of cake with coffee mixture.
  • Now spread half of cheese frosting on moist layer.
  • Cover the second layer of cake and again moist it with coffee syrup, cover the sides and top of cake with frosting.
  • Sprinkle grated chocolate on top.
  • Nandos Coffee Cake is ready to serve.
