How to Make Perfect Arabic Chicken Shawarma
The word shawarma comes from the Turkish word çevirme “turning”, and has Shawarma origins in Anatolia, Turkey. Its meat preparation, where lamb, chicken, or mixed meats are placed on a spit and grilled for as long as a day. Shavings are cut off the block of meat for serving, and the remainder of the block of meat is kept heated on the rotating spit. But at home it’s not possible to cook Shawarma like in a restaurant. So we can cook in oven or on skillet. Shawarma also refers to a sandwich or wrap. Shawarma is eaten with bread, tomato, and cucumber. Toppings include tahini, hummus and pickled.
Ingredients for chicken marinating:
- Chicken breast and de bone thigh pieces – ½ kg
- Black pepper – 1 tsp
- Cumin powder – ½ tsp
- White pepper – 1 tsp
- Clove powder – ½ tsp
- Green cardamom powder – ½ tsp
- Nutmeg powder – ¼ tsp
- Lemon juice – 2 tbsp
- Salt – to taste
- Olive oil – 4 tbsp
- Garlic paste – 2 tbsp
- Red chili powder – 1 tbsp (optional)
Method:
Flatten chicken breast and thigh pieces. Now apply all above ingredients step by step on chicken expect oil and leave for 24 hours. Then place foil on oven tray, place chicken, pour olive oil and bake in preheated oven on 180 degree for 20 to 25 minutes. When it’s done cut in small chunks.
Ingredients for Sauce:
- Chopped garlic – 2 tbsp
- Yogurt – 2 cup
- Tahini paste – 3 tbsp
- Olive oil – 2 tbsp
- Salt – to taste
- Lemon juice – 2 tbsp
Method:
Take a pan, heat up oil and fry garlic until light brown. Put yogurt, tahini paste, salt, fried garlic along oil and lemon juice in a bowl, mix well. Cut cucumber and tomato in slices. Now in warm pita bread fill with cooked chicken, sauce, then salad and serve. If anyone wants it spicy, add chili sauce.
