This hearty Moroccan steak salad with root vegetables makes a lovely autumnal lunch, as you can enjoy it during the cold winter months as well. Try it and let us know what you think!

Moroccan Steak Salad Recipe

Ingredients:

  1. Sirloin steaks – 2
  2. Olive oil – 4 tbsp
  3. Moroccan Seasoning – 1 tbsp
  4. Carrots (peeled and sliced length ways) – 3
  5. Small parsnips (peeled and sliced length ways) – 2
  6. Rocket – 100 g
  7. Pomegranate Seeds – 80 g
  8. Pine nuts (toasted) – 50 g
  9. Lemon wedges – to taste

Dressing:

  1. Lemon juice – 1 tbsp
  2. Honey – 1 tsp
  3. Olive oil – 2 tbsp

Method:

  • Mix 1 tbsp of the oil with the seasoning and rub into the steaks. Set aside.
  • Put the carrots and parsnips in a roasting tin and toss in 1 tbsp of the oil.
  • Roast for 30 minutes, in an oven pre-heated to 200 C/180 C Fan/Gas 6, then leave to cool slightly.
  • Heat a griddle pan until hot.
  • Cook the steaks for 4 minutes on each side for rare or 6 minutes each side for well done.
  • Put on a foil-covered board to rest for 10 minutes.
  • Whisk 2 tbsp of live oil, the lemon juice and honey together. Put the roast veg and rocket in a bowl, and toss with the dressing.
  • Slice the steaks and serve on the salad.
  • Sprinkle over the pomegranate seeds and pine nuts, and serve with lemon wedges.
