Ingredients:
- Urad dal with skin – 1/2 cup
- Turmeric powder – 1/2 tsp
- Salt – 1/2 tsp
- Dry fenugreek leaves – 1 tsp
Ingredients for masala:

- Ghee – 1 tbsp
- Bay leaf – 1
- Cumin seeds – 1 tsp
- Dry whole red chillies – 2
- Cinnamon stick – 1
- Cloves – 2
- Mustard seeds – 1/4 tsp
- Asafoetida – 1/2 tsp
- Onion – 1/3 cup chopped
- Ginger garlic paste – 1/2 tbsp
- Red chilli flakes – 1/2 tsp
- Red chilli powder – 1/2 tsp
- Curry powder – 1/4 tsp
- Garam masala powder – 1/4 tsp
- Tomatoes – 2 chopped
- Fresh coriander
- Dry fenugreek leaves – for garnishing
Instructions:
- Rinse the urad dal with water to remove any impurities and debris.
- Soak the dal in water for at least 3-4 hours or overnight.
- Drain the soaked dal and rinse it again.
- In a pot, add the soaked dal, water, salt, turmeric powder and dry fenugreek leaves.
- Cook the dal on medium heat. Simmer the dal until it is soft and cooked through, which may take around 20 to 30 minutes. You may need to add more water if necessary.
- Once the dal is cooked, you can mash it slightly using a spoon or a potato masher if desired, or leave it as is for a more textured consistency.
Preparation to make masala for urad dal dhaba style:
- Heat up ghee in a pan, stir fry whole masala (cumin seeds, cloves, dry whole red chilli, cinnamon stick and bay leaf).
- Add chopped onion and ginger garlic paste. Fry well.
- Add spices and chopped tomato, cook well.
- Add this masala in cooked daal along with some water. Cook on low flame for 5 to 10 minutes
- Garnish with fresh coriander, dry fenugreek leaves and butter or desi ghee.
- Serve hot with rice or Indian bread such as roti, naan, or paratha.
- Urad dal with skin is delicious and nutritious, and it can be enjoyed as a main dish or as a side dish with other Indian curries.
