Baray Mian Ki Mutton Biryani
Ingredinets:
- Mutton – 750 kg
- Rice – 750 gm
- Fennel seeds – 1 tbsp
- Dry corainder seeds – 1 tbsp
- Cumin seeds – 1 tbsp
- Ginger chopped – 2 tbsp
- Chopped garlic – 2 tbsp
- Black pepper – 8
- Bay leaf – 1
- Cinnamon stick – 1
- Cloves – 4
- Green cardamoms – 6
- Fried onion – 1 cup
- Red chili powder – 2 tsp
- Garam masala powder – 1 tsp
- Ghee or oil – 1 cup
- Salt – 2 tsp
- Coriande powder – 1 tsp
- Yogurt – 1 cup/ 250 gm
- Kewra – 2 tsp
- Yellow food color – 1/4 tsp
- Orange food color – 1/4 tsp
Method:
- Put fennel seeds, dry coriander seeds, cumin seeds, ginger and garlic in muslin cloth and make masala bag.
- In a pan, add mutton, masala bag, 5 glasses of water, whole garam masala and salt, cook until mutton is done.
- Then sqeeze masala bag and discard.
- Then take a pan, heat up ghee or oil, then add fried onion along with mutton, salt, red chili, garam masala powder, coriander powder and yogurt, fry well.
- Then add stock, bring to boil and add soaked rice.
- Cover and cook until water dries.
- Then pour food colors mix and kewra, put on dum for 20 minutes.
- Serve with salad and raita.
