Beef Paya, also known as Beef Trotters or Nihari, is a rich and flavorful dish that is popular in South Asian cuisine. Here’s a simple recipe for making Beef Paya:

Ingredients to boil the paye:
- Beef Paye or trotters β 1 kg (cut in small pieces)
- Turmeric powder β 1/4 tsp
- Salt β to taste
- Ginger garlic paste β 1 tbsp
- Green chilies – 6
- Whole masala (cinnamon stick 1, black cardamoms 2, green cardamoms 4, cloves 4)
Ingredients for Gravy:
- Oil β 1/4 cup
- Thinly chopped Onion β 1
- Ginger garlic paste β 1 tbsp
- Red chilli powder β 1 tsp
- Chili flakes – 1 tsp
- Coriander powder β 2 tsp
- Cumin powder – 2 tsp
- Degi mirch β 1 tsp
- Dry fenugreek leaves β 1 tsp
- Salt β to taste
- Fresh coriander

Method to prepare beef Paya:
- Take a large size of pan, add beef paye, turmeric powder, salt, ginger garlic oaste, green chillies, whole masala and water. Cook until tender
- Then take a pan, heat up oil and fry onion until golden brown.
- Then add ginger garlic paste, stir fry for few seconds.
- Add red chilli powder, chili flakes, coriander powder, cumin powder and degi mirch with little bit of water to prevent burn.
- Now add fenugreek dry leaves, coriander powder, red chilli powder, turmeric powder, degi mirch and salt. Fry well.
- Then add beef paye (without stock) and fry for 2 minutes. Add dry fenugreek leaves.
- Now add all stock, mix well and cook for 10 minutes.
- Then add chopped fresh coriander.
- Serve after 5 to 8 minutes with naan or chapattis.
