Black Forest (Schwarzwälder Kirschtorte) is a typical Baden cuisine cake and one of the most precious sweets in German cuisine. It is a cake between 25 and 30 cm in diameter, composed of several layers of chocolate sponge cake embedded in kirsch and interspersed with cream and cherry jam. It is covered with whipped cream, chocolate shavings and cherries. I made some changes to make this cake alcohol free. I would say, this is the best black forest cake recipe I ever tried.

Whipped Cream Recipe: Urdu – English

Ingredients for Cake:

  1. All-purpose flour – 2 cup
  2. Baking soda – 2 tsp
  3. Baking powder – 1 tsp
  4. Salt – 1 tsp
  5. Cocoa powder – 3/4 cup
  6. Eggs – 2
  7. Sugar – 2 cups
  8. Vanilla extract – 1 tsp
  9. Vegetable oil – 1 cup
  10. Full cream milk – 2 cups

Method for Cake:

  • Grease and dust two 8-inch round cake pans and set aside.
  • Sift flour, baking soda, baking powder, salt and cocoa powder.
  • In a bowl, add eggs, sugar, vanilla, vegetable oil and milk, beat well.
  • Then add dry ingredients and mix with light hands.
  • Divide batter evenly between two pans. Bake at 180°C for about 40 minutes or until cake tester comes out clean.
  • Remove cake from oven, let cool completely.
  • Cut each cake in half horizontally to make four equal layers.

Ingredients for Sugar Syrup:

  1. Sugar – 1/2 cup
  2. Water – 1/4 cup
  3. Cherry juice – 1/4 cup

Method for syrup:

  • Bring sugar and water to a boil. Add cherry juice and reduce slightly until syrupy consistency.

Ingredients for Chocolate Ganache

  1. Whipping cream – 3/4 cup
  2. Milk chocolate chips – 2 1/4 cup
  3. Salt – 1 pinch

Method for ganache:

  • In a pan simmer cream and pour over chocolate chips. Let sit, then mix until smooth.
  • Leave for a while until cool at room temperature.

For Decoration:

  1. Cherries – as required
  2. Whipped cream – 2 cups

To assemble the Cake:

  • Place one of the cake layers on the bottom. Brush generously with syrup. Spread with mousseline cream or whipped cream and place a single layer of cherries.
  • Place 2nd layer of cake, press down gently. then syrup and then thick layer of ganache.
  • Now place 3rd layer of cake, apply syrup and spread whipped cream and a layer of cherries.
  • Top with final layer of cake, apply whipped cream and decorate with cherries and chcolate curls.
