Chinioti Pulao Recipe

Very simple technique but mouth watering recipe contains less spices and easy to prepare chinioti pulao recipe created by Chef Shireen Anwer.

Chinioti Pulao Recipe

Ingredients:

  1. Mutton – 1 kg
  2. Green chilies- 15
  3. Whole black pepper – 1 tsp
  4. Big cardamoms – 2
  5. Cloves – 1 tsp
  6. Cumin seeds – 1 tsp
  7. Cinnamon stick – 2
  8. Green cardamoms – 3
  9. Ginger garlic paste – 2 tbs
  10. Salt – 1 tsp plus 1 tbsp
  11. Red chili powder – 1/2 tbsp
  12. Dry plums – 8
  13. Chopped tomato – 3
  14. Oil – 1 cup
  15. Onion – 2 or 2 cups
  16. Rice – 1 kg

Method:

  • Take a pan, add mutton, 4 cups of water, green chili, whole black pepper, big cardamoms, cloves, cumin seeds, cinnamon stick, ginger garlic paste, 1 tsp salt, red chili powder and green cardamoms, cover and cook for 15 to 20 minutes.
  • Then add soaked dry plum and chopped tomatoes and mix well, cook until mutton is tender.
  • Now take another pan, heat up oil and fry onion until golden brown.
  • Then cooked mutton (not stock) and 1 tbsp salt, fry well.
  • Then add soaked rice and remaining stock and extra water according to rice.
  • Cover and put on dum for 5 minutes on high flame then reduce flame and cook for 15 minutes.
