Baked Salmon and Asparagus in Foil
Ingredients:
- Salmon fillets – 500 gm
- Melted Garlic Butter – 30 gm
- Red chili flakes – 1 tsp
- Lemon Juice – 1 tbsp
- Salt – 1/2 tsp or to taste
- Cayenne pepper – 1/2 tsp
- Dijon mustard – 1 tsp
- Honey – 1 tsp
Ket Fried Fish
Method:
- Line foil in oven tray. Place salmon in the center of the foil.
- In a small bowl, add garlic butter, red chili flakes, lemon juice, salt, cayenne pepper, mustard and honey. Mix well.
- Pour garlic butter mixture over the salmon and then fold foil up around it to create a packet.
- Place in preheated oven on 200°C and bake for 10 to 12 minutes
- Remove salmon from oven and turn broiler on HIGH.
- Unfold the foil and place salmon back under broiler for 2 to 3 minutes till there is slight browning over caramelization on top.
- Remove from oven. Garnish with chopped coriander and lemon wedges.
- Serve this delicious dish with steamed vegetables or as it is.
