Coffee cake is a most favorable cake in all around the world. Coffee cake serve as part of a breakfast or can be eaten during coffee break. These cakes sometimes have a crumbly or crumb topping called streusel or a light glaze drizzle.
Easy Coffee Cake Recipe
Ingredients:
- Flour – 150 gm
- Butter – 150 gm
- Egg – 3
- Baking powder – 1 1/2 tsp
- Sugar – 150 gm
- Milk – 2 to 3 tbsp
Ingredients for Icing:
- Icing sugar – 300gm
- Butter – 150gm
- Coffee – 2 tsp dissolves in 2 tbsp milk
Beat butter, coffee mixture and icing sugar until light and fluffy.
Method:
- In a bowl, put butter and sugar; beat with electric beater until it becomes cream.
- Take another bowl and strain flour and baking powder.
- Now add eggs one by one with 1 tbsp of dry mixture and beat well.
- Now add remaining dry mixture and beat on low speed or fold with spatula, along with milk.
- Transfer this mixture into two 8” cake pans and bake in preheated oven at 180ºC, 350ºF and Gas Mark 4 for 20 to 25 minutes. When it’s done, let it cool down completely.
- Then apply icing on both layers and decorate.
- Then apply crushed ginger biscuit on around the cake and serve with coffee or tea.
