Crispy Potato Cheese Quesadilla

Ingredients:

  1. Water – 300 ml
  2. Salt – 1/2 tsp
  3. Butter – 20 gm
  4. Plain flour – 250 gm
  5. Corn flout – 25 gm

Method:

  • In a wok or pan, add water, salt and butter, bring to boil.
  • Add plain flour and corn flour, mix and turn of the flame.
  • Mix it well until form into soft dough, divide into 8 to 10 portion or according to your choice.
  • Make balls and let it rest for 10 minutes.
  • Roll each ball on a lightly floured surface into a 6-7 inch circle.
  • Heat up a skillet or non-stick pan, cook each tortilla for 30-60 seconds, until bubbles form and golden spots appear on the underside. Flip and cook another 15-20 seconds on the other side.
  • Cooked tortillas place under a slightly damp kitchen towel – the steam helps them stay soft.
  • Serve warm, or cool and refrigerate for up to 1 week.
  • If you want to freeze, layer with parchment and store in a zippered bag.
