How to Cook Saudi Kabsa, complete recipe of Saudi rice with sauce and spices in Urdu and English method.

How to Cook Saudi Kabsa

Ingredients for Lamb:

  1. Mutton or lamb – Β½ kg
  2. Ginger garlic paste – 2 tsp
  3. Butter – 4 tbsp
  4. Oil – 3 tbsp
  5. Salt – 1 tsp
  6. Green cardamoms – 5
  7. Cinnamon sticks – 2
  8. Water – 5 cups
  9. Kabsa spice mix – 2 tsp

Method:

  • Take a pan, add 2 tbsp butter, 2 tbsp oil and fry mutton until brown.
  • Also add green cardamom, salt, cinnamon sticks and ginger garlic paste while frying.
  • Then add 5 glasses of water; cover and cook until mutton or lamb done.
  • Then remove from heat and separate the mutton and stock.
  • Now in clean pan, add 2 tbsp butter, 1 tbsp oil and fry mutton for 2 to 3 minutes.
  • Then add kabsa spice mix and mutton is done.

Ingredients for rice:

  1. Rice – Β½ kg
  2. Butter – 2 tbsp
  3. Oil – 2 tbsp
  4. Thinly chopped onion – 1
  5. Carrots – 2 cut in cubes
  6. Capsicum – 1 chopped
  7. Salt – to taste
  8. Fried cumin seeds – 1 tsp
  9. Crushed coriander seeds – 1 tsp
  10. Black pepper – 1 tsp
  11. Tomato – 4 blended
  12. Kabsa spice mix – 1 tsp
  13. Mutton stock – as required

Method:

  • In a pan, add butter and oil, heat it up and sautΓ© onion, then add carrots, salt, cumin seeds, coriander seeds, black pepper, fry for 1 minute.
  • Then add washed and drained rice and blended tomato mix well.
  • Now add stock according to rice and kabsa spice mix, cover and cook until water dries.
  • Then add capsicum and put on dum for 10 minutes.
  • Then serve with mutton, kabsa sauce and garnish with nuts topping.

Nuts for Toppings:

  1. Pine nuts – Β½ cup
  2. Chana dal – 2 tbsp (boiled)
  3. Raisins – 2 tbsp (soaked in water for Β½ an hour)
  4. Butter – 1 tbsp
In a pan, fry pine nuts, boiled chana dal and raisins in butter until light golden.

Kabsa Spice Mix Recipe

Ingredients:

  1. Ground saffron – Β½ tsp
  2. Green cardamom powder – Β½ tsp
  3. Cinnamon powder – ΒΌ tsp
  4. Turmeric powder – Β½ tsp
  5. Ground coriander seed – Β½ tsp
  6. White pepper – Β½ tsp
  7. Garam masala powder – Β½ tsp
  8. Ginger powder – Β½ tsp

Method:

Mix all spices and use in kabsa dish

Kabsa Sauce:

Ingredients:

  1. Butter – 1 tbsp
  2. Oil – 1 tbsp
  3. Chopped onion – 3 tbsp
  4. Peeled tomato – 1 can or 4 peeled fresh tomato
  5. Tomato paste – 1 tsp
  6. Salt – Β½ tsp
  7. Black pepper – Β½ tsp

Method:

  • Take a pan, add butter, oil and sautΓ© onion.
  • Then add peeled tomato, tomato paste, salt, black pepper and cook for 5 minutes.
  • Then serve with kabsa rice.
