Tasty Vanilla Cupcakes

16 cupcakes
Ingredients:

  1. Plain flour – 1 ¾ cups
  2. Eggs – 2
  3. Vanilla extract – 1 tbsp
  4. Granulated sugar – 1 cup
  5. Baking powder – 1 ½ tsp
  6. Unsalted butter – 60gm
  7. Plain yogurt – 1/3 cup
  8. Vegetable oil – ¼ cup
  9. Baking soda – ½ tsp
  10. Salt – ½ tsp
  11. Milk – 2/3 cup

Method:

  • In a large mixing bowl, cream the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Beat in the yogurt, oil, and vanilla extract.
  • In a separate bowl, sift together the flour, baking powder, bicarbonate of soda, and salt.
  • Now gradually add dry mixture.
  • Stir in the milk, mixing until batter is uniform and smooth.
  • Fill baking cups about 2/3 full and bake in preheated oven on 180°C, Gas Mark 4 for 12-14 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven, transfer cupcakes to a cooling rack, and allow them to cool to room temperature before frosting or serving.

Ingredients for Vanilla Butter cream Frosting:

  1. Icing sugar – 2 ½ cups
  2. Butter – 1 cup /200gm
  3. Vanilla extract – 1 tbsp

Make the frosting.

  • Mix sugar and butter on low speed until well blended and then increase speed to medium-high and beat for another 3-4 minutes.
  • Blend in vanilla and continue to beat on medium-high speed until light, fluffy and smooth.
  • Now ice the cupcakes and serve.
