Delicious ice cream waffle sandwich with peanut butter and strawberry jam. It can be served as a breakfast and as a dessert.

Ice Cream Sundae: English – Urdu Recipe

Ingredients for Waffles:

  1. Plain flour – 160 g
  2. Corn flour – 40 g
  3. Brown sugar – 2 tbsp
  4. Baking powder – 1/2 tsp
  5. Baking soda – 1/4 tsp
  6. Salt – 1/4 tsp
  7. Unsalted butter, melted – 100 g
  8. Buttermilk – 240 ml
  9. Egg – 1

Ingredients for Ice Cream:

  1. Ripe bananas, sliced and frozen – 4
  2. Milk – 2 tbsp

Ingredients for Garnishing:

  1. Peanut butter – 4 tbsp
  2. Strawberry jam – 4 tbsp
  3. Strawberries, halved (optional) – handful
  4. Icing sugar (to dust) – handful
  5. Freshly sliced banana

  • In a bowl, combine the flours, sugar, baking powder, baking soda and salt. In a separate bowl, mix the melted butter, buttermilk and egg. Fold the wet mixture into the dry mixture, then mix until you have a smooth batter.
  • Blitz the frozen bananas and milk in bursts in food processor, scraping down the sides in between, until you have a thick, smooth ice cream. Transfer to a container and put in the freezer.
  • Heat your waffle iron. Cook the batter in batches following the instructions, until crisp and golden.
  • When you have 8 waffles, leave to cool for a few mins on a rack to prevent the ice cream from melting too quickly in the next step.
  • When ready to serve, spread 1 tbsp each of peanut butter and jam over 4 waffles, then spoon a quarter of the banana ice cream onto each one. Scatter with the strawberries and extra banana slices, if using.
  • Top with another waffle. Gently press the two waffles together and dust with a little icing sugar. Serve immediately.

No waffle iron? Add ladles of batter to a hot griddle pan and cook for 4-5 mins on each side, until golden.
