Kaleji Gurda Masala
Ingredients:
- Liver (Kaleji) – 1/2 kg
- Oil – 4 tbsp
- Onion – 1 sliced
- Ginger garlic paste – 2 tsp
- Red chili flakes – 1 tsp
- Crushed dry coriander seeds – 2 tsp
- Crushed cumin seeds – 1 tsp
- Red chili powder – 1 tsp
- Salt – 1/2 tsp
- Dry fenugreek leaves – 2 tsp
- Fresh coriander – 2 tbsp
- Lemon juice – 1 tbsp

Method:
- Wash kaleji and cut in small pieces and put in boiling water for 1 minute. Strain and discard the water.
- Heat up oil in a wok, sauté onion and add kaleji. Fry for 2 minutes.
- Add ginger garlic paste, red chili flakes, dry coriander, cumin, red chili powder, salt and fenugreek leaves. Fry well.
- Now fry on a slightly high flame until kaleji is tender.
- Garnish with fresh coriander and serve.
