Kiwi Yogurt Parfait
This vibrant fruit parfait would be just as tasty for breakfast as for dessert, with its refreshing layers of creamy yogurt, tangy kiwi, mint fragrant and juicy pomegranate seeds add a final flourish. Super simple to put together but looks impressive with its colourful layers.
This fuzzy brown fruit has juicy sweet, emerald flesh and is a good source of fibre and vitamin C. Named after the native bird of New Zealand, kiwis actually originate from China and are grown as far afield as South America, Greece and Italy.
The fruit should be firm but yielding when gently squeezed. if it needs ripening, try putting it in a paper bag with a banana to speed up the process.

Ingredients:
- Greek yogurt – 450 gm
- Kiwis – 5 peeled and diced
- Mint sprigs – 2 leaves picked and chopped
- Pomegranate seeds – 20 gm
- Icing sugar – 2 tbsp or clear honey (optional)
Method:
- Place a muslin cloth on a bowl or glass and pour in the yogurt. Put in the fridge for 1 hour for the excess moisture to drain off.
- Then pour hung yogurt in a bowl along with icing sugar or honey and whisk it well.
- Fill the cake piping bag with yogurt and layer the yogurt and kiwis in small glasses.
- Finish with the pomegranate seeds, mint and a drizzle of honey, if using, then serve immediately.
Keto Saffron Barfi
Tip: If you are short on time, you could leave out the step of straining the yogurt and simply stir icing sugar or honey together. The dessert won’t hold its shape quite as well, but will still taste delicious.
