Mooli paratha: Stuffed paratha are everyone’s favourite parathas, such as aloo paratha, missi paratha, gobhi paratha, etc. Summer has started in Spain but here in Madrid, the weather is still breezy. After a long time in lockdown, I finally found fresh white mooli (radish) at the supermarket, and I decided to make stuffed mooli parathas for my family.
Mooli Paratha
Ingredients:
- Shredded white mooli (redish) – 1 1/2 cup
- Oil – 1 tbsp
- Cumin seeds – 1/2 tsp
- Turmeric powder – 1/4 tsp
- Red chilli flakes – 1 tsp
- Crushed dry coriander seeds – 1 tsp
- Salt – to taste
- Fresh coriander – 2 tbsp
- Simple whole wheat dough – as required
Method:
- Heat up oil in a pan. Stir fry cumin seeds and add shredded mooli (radish). Fry until the water dries.
- Add turmeric powder, chilli flakes, dry coriander and salt. Mix and fry well.
- Add fresh coriander. Mix well and remove the pan from the flame and set aside.
- Divide dough into small balls. Roll each ball into a disc size. Place cooked mooli on one, then cover with a second layer of dough as shown in the video and cook on hot tawa with oil or ghee from both sides.
- Serve hot with mint chutney or red chilli chutney.
