Paya Chana Recipe

Ingredients:

  1. Mutton paye – 6
  2. Boiled white chickpeas – 300 gm
  3. Yogurt – 1 cup
  4. Red chili powder – 3 tbsp
  5. Coriander powder – 2 tbsp
  6. Turmeric powder – 1 tbsp
  7. Cumin powder – 1 tbsp
  8. Ginger garlic paste – 2 tbsp
  9. Garam masala powder – 1 tbsp
  10. Bay leaves – 1
  11. Cinnamon stick – 1
  12. Cloves – 6
  13. Green cardamom – 4
  14. Onions – 2
  15. Oil – 1 cup
  16. Salt – to taste
  17. Chopped green chilies – for serving
  18. Fresh coriander – for serving
  19. Lemon slces – for serving
  20. Whole ginger – for serving

Kunna Paya

Method:

  • Take a pan, add soaked chickpeas and whole garam masala, boil till tender, then thow out whole masala and keep aside boiled chickpeas.
  • Take another pan, add paye, roughly chopped ginger garlic and onion, cook until tender, then throw out onion and ginger garlic.
  • Now heat up oil in another pan, put bay leaves, cloves, green cardamoms and cinnamon stick, fry for 1 minutes.
  • Then put ginger garlic paste and boiled paye, fry for 1 minute.
  • Then add yogurt and fry well, now add red chili powder, cumin powder, turmeric powder, coriander powder, garam masala powder and salt, fry well.
  • Then add chickpeas and paya stock along with some water, cover and cook on low heat until everything cooks well.
  • Finally add onion bighar and dish out.
