How to Make Reshmi Biryani: English – Urdu Recipe

Ingredients:

  1. Chicken – 1 kg
  2. Ginger garlic paste – 2 tbsp
  3. Salt – to taste
  4. Onion – 250 gm
  5. Oil – 1 cup
  6. Tomato – 3 chopped
  7. Fresh coriander – ΒΌ cup
  8. Mint leaves – 12
  9. Green chillies – 10
  10. Red chili powder – 1 tbsp
  11. Yogurt – 250 gm
  12. Potato – 2
  13. Dry plums – 10 soaked
  14. Garam masala powder – 2 tsp
  15. Rice – Β½ kg

Ingredients for layers:

  1. Mint – ΒΌ bunch
  2. Fresh coriander – Β½ bunch
  3. Green chilies – 4
  4. Fried brown onion – ΒΌ cup
  5. Orange food color – few drops
  6. Kewra water – 1 tbsp

Method:

  • Make a green paste with fresh coriander, mint and green chilies.
  • Boil rice with 1 tbsp of whole garam masala. Take a pan, add oil and fry onion until it’s golden brown.
  • Then take out ΒΌ cup of onion and in rest of onion add chicken, fry a little bit.
  • Then add ginger garlic paste, tomato, green masala and fry well.
  • Then add salt, red chili powder, yogurt, mix it well.
  • Then add potato, soaked dry plums, garam masala powder, mix well and cook until chicken is tender.
  • Now take a pan, put 2 tbsp of water and 2 tbsp of oil, mix and spread half boiled rice, then cooked chicken with gravy, then brown onion, fresh coriander, mint, green chilies and remaining boiled rice, then on top add kewra water, orange food color, fried onion and 1 tbsp of oil.
  • Cover and put on dum for 15 to 20 minutes. Serve with raita and kachoomer salad.
