Try this biryani on Eid or any occasion, it’s so yummy and chicken will be soft like resham. You can use mutton instead of chicken, it’s up to you.
Reshmi Biryani
Ingredients:
- Chicken – 1kg
- Papaya paste – 1 tbsp
- Fried onion – 1 cup
- Salt – 1 1/2 tsp
- Red chili powder – 3 tsp
- Ginger garlic paste – 2 tbsp
- Coriander powder – 2 tsp
- Garam masala powder – 1 tsp
- Yogurt – 375gm
- Rice – 750gm
- Bay leaf – 1
- Black cumin seeds – 1/2 tsp
- Cinnamon stick – 1
- Cloves – 3
- Black pepper – 6
- Green cardamom – 4
- Oil – 1/2 cup
- Whole green chili – 5
- Potato – 4 fried
Method:
Apply papaya paste, fried onion, salt, red chili powder, ginger garlic, coriander powder, garam masala and yogurt on chicken slices and leave for 2 hours. Boil rice with salt to taste, bay leaf, black cumin seeds, cinnamon, cloves, black pepper and green cardamom. Now take a pan, heat up oil and cook marinated chicken until tender, then add fried potato and green chilies, fry well.
Ingredients for layers:
- Mint – ¼ bunch
- Fresh coriander – ½ bunch
- Tomato – 2 sliced
- Milk – 1/4 cup
- Orange food color – few drops
- Saffron – 1 pinch
Mix saffron and food colour in milk
Method:
Take a pan, add 2 tbsp of oil, then spread some boiled rice, then chicken, then tomato slice, fresh coriander, mint and remaining boiled rice, then on top spread milk mixture, cover and put on dum for 15 to 20 minutes. Serve with raita and salad.
