Street Style Beef Paya at Home
Although less known in our gastronomy than those of beef paye or beef trotters are delicious and also with more meat.
They are very gelatinous, so the stews in which we use them usually have a very thick texture. They are usually used in other preparations in which we want the sauce or broth to thicken.
For this recipe we first have to boil them, so that they are tender, and then stew them with a simple but very tasty sauce.
If you let them rest long enough or even if you serve them the next day, their flavor will be more intense.

Tawa Naan without Yeast
Ingredients to boil the paye:
- Beef Paye or trotters – 3 kg
- Turmeric powder – 1/4 tsp
- Salt – 1/2 tsp
- Red chilli powder – 1/2 tsp
- Ginger garlic paste – 2 tsp
Ingredients for Gravy:
- Oil – 1/3 cup
- Thinly chopped Onion β 1/3 cup
- Ginger garlic paste β 2 tbsp
- Fenugreek dry leaves β 1 tsp
- Degi mirch – 1 tsp
- Red chilli powder – 2 tsp
- Coriander powder β 1 1/2 tbsp
- Turmeric powder β 1/2 tsp
- Salt β to taste
Keto Naan Bread Recipe
Method:
- Take a large size of pan, add beef paye, turmeric powder, salt, red chilli powder and water. Cook for 10 minutes.
- Add ginger garlic paste and cook until tender.
- Then take a pan, heat up oil and fry onion until golden brown.
- Then add ginger garlic paste with little bit of water to prevent burn.
- Now add fenugreek dry leaves, coriander powder, red chilli powder, turmeric powder, degi mirch and salt. Fry well.
- Then add beef paye (without stock) and fry for 2 minutes.
- Now add all stock, mix well and cook for 10 minutes.
- Then put 1 tsp fenugreek leaves and chopped fresh coriander, ginger flakes and green chillies.
- Serve after 5 to 8 minutes with naan or chapattis.
