How to Make Cream of Broccoli Soup
Broccoli is high in vitamin C. It can be eaten steamed or raw but I think the best way is to eat it with soup or with salad, and if you want to know more of its benefits, read Benefits of Broccoli.
Ingredients:
- Broccoli – 250gm
- Butter – 2 tbsp
- Flour – 3 tbsp
- Salt – 1 tsp
- White pepper – 1 tsp
- Milk – ½ litre
- Chicken stock – 4 cups
- Cream – ½ cup
- Parsley – 1 tsp
Method:
In a pan, melt butter and add flour, salt and white pepper, fry it until becomes frothy. Remove from the heat, gradually add milk, and mix well. Then add chicken stock and bring to boil. When it starts boiling, add broccoli, reduce heat and simmer until broccoli is tender. Then add cream, cook for 1 minute. Pour in serving bowl, garnish with fresh or dry parsley and serve with salt and pepper.
