Grease a spring foam cake pan. Now take a bowl and put eggs, sugar and beat until white foam forms, then add vanilla essence and beat well. Now add flour and mix with a spoon and bake on 180º/350F/Gas mark 4 for 15-20 minutes. When the cake is done, let it cool down completely. Now cut in 2 parts from the middle.
Ingredients for Icing:
Fresh cream – 300g
Icing sugar – 4tbsp
Ice cream – in 3 different flavours (as required)
Now put one part of the cake and put one layer of ice cream and then leave it in the freezer. When its frozen , then spread second layer and freeze again, and then finally third layer and put on the second cake part on top and leave it in the freezer. Now beat cream and icing sugar till it becomes a white foam and decorate ice cream with whipped cream as you like.
