How to Make Kofta Korma: English – Urdu Recipe
Ingredients for kofta:
- Mince – 400 gm
- Ginger garlic paste – 2 tsp
- Nutmeg powder – 1/4 tsp
- Mace powder – 1/4 tsp
- Red chili powder – 1 1/2 tsp
- Onion – 1 (ground)
- Fried brown onion – 2 tbsp
- Roasted and grind poppy seeds – 1 tbsp or 8 ground cashew nuts
- Roasted gram flour – 1 tbsp (bhuna chana)

- In a grinder add mince, ginger garlic paste, nutmeg, mace, red chili, onion paste, brown onion, poppy seeds or cashew and bhuna chana powder and grind well.
- Then make kofta shape and set aside.
- Take a pan, add 4 glass of water, salt, bay leaf and bring to boil.
- Then add kofta in this boiling water and boil for 10 minutes and drain stock in separate bowl for rice.
Ingredients for rice:
- Salt – to taste
- Bay leaf – 1
- Cumin seeds – 1/2 tsp
- Rice – 1/2 kg
- Oil – 3/4 cup
- Ginger garlic paste – 1 tbsp
- Red chili powder – 1 1/2 tsp
- Garam masala powder – 1 tsp
- Yogurt – 1/2 cup
- Fresh coriander – 2 tbsp
- Kewra water – 1 tbsp
- Yellow food color – 1/4 tsp
- fried brown onion – 1/4 cup
Method:
- Now take a wok, heat up oil and fry ginger garlic paste for 5 sec.
- Then add salt, red chili powder, garam masala powder and yogurt, mix and fry well.
- Then add boiled koftay, and cook well.
- In a separate pan add stock, cumin seeds, salt and soaked rice.
- When rice is tender, take out half rice, then pour kofta mixture, then remaining rice, then brown onion, kewra and yellow colour mix.
- Put on dum for 15 minutes.
