Strawberry Filled Cupcakes

Everybody loves strawberries, and kids especially love strawberry filled cupcakes. Strawberries season is going so why not save some for your loved ones and make these delicious strawberry filled cupcakes with strawberry butter cream frosting. This recipe yields 14 cupcakes, you can double your recipe if you want to make more.

Strawberry Filled Cupcakes

YUMMY COCONUT CUPCAKES

Yields: 14 Cupcakes

Ingredients for Cupcakes:

  1. Plain flour – 1 1/3 cups
  2. Eggs – 2
  3. Vanilla – 2 tsp
  4. Granulated sugar – 1 cup
  5. Baking powder – 1 1/4 tsp
  6. Unsalted butter – 115 gm softened
  7. Sour cream – 1/2 cup
  8. Salt – 1/4 tsp

Method for Cupcakes:

  • Strain flour, salt and baking powder, set aside.
  • In the bowl of a mixer, add butter and sugar and beat until smooth and fluffy. Now add eggs one at a time, and beat until combined. Add sour cream and vanilla and beat until combined.
  • Now slowly add dry ingredients and mix gradually, do not over mix the batter.
  • Fill muffin cups about 3/4 full. Bake for 15-18 minutes.
  • Remove from the oven and set aside to cool completely.
  • Then cut a small hole into the top of each cupcake.
  • Spoon about 1 tsp of filling into the top of each cupcake.
  • Decorate with frosting on top of cupcake, completely covering the filling. If desired, garnish with additional strawberries.

Ingredients for Strawberry Filling:

  1. Sugar – 1/2 cup
  2. Water – 1/2 cup
  3. Strawberries – 2 cups frozen or fresh
  4. Vanilla – 1/2 tsp
  5. Corn starch – 2 tsp
  6. Water – 2 tsp

Method for Filling:

  • In a medium pot, combine sugar, 1/2 cup water, strawberries and vanilla. Bring to a simmer and cook 3-4 minutes, until straberries start to soften.
  • Combine corn starch and water in a small bowl and slowly add to the strawberries, stirring constantly.
  • Remove from heat and set aside to cool.

Ingredients for Strawberry Frosting

  1. Icing sugar – 3 cups
  2. Unsalted butter – 225 gm(softened)
  3. Vanilla – 2 tsp
  4. Heavy cream – 2 tbsp
  5. Strawberries puree – 1/4 cup

Method for Strawberry Frosting

  • Beat butter and sugar with an electric mixer until smooth and fluffy.
  • Add vanilla and 1 tbsp of cream. If frosting is too thick, beat in another tbsp until icing reaches desired consistency.
  • Stir in strawberries puree
  • Frost completely cooled strawberry cupcakes with strawberry icing.
