Ingredients for dough:
- Plain flour – 2 cups
- Salt – 1/2 tsp to taste
- Sugar – 1/2 tsp
- Oil – 1 tbsp

Ingredients for filling:
- Oil – 1 tbsp
- Fenugreek seeds – 1/4 tsp
- Mustard seeds – 1/4 tsp
- Cumin seeds – 1 tsp
- Red chili flakes – 1 tsp
- Boiled and mashed potato – 2
- Turmeric powder – 1/4 tsp
- Coriander seeds ground – 1/2 tsp
- Salt – 1/2 tsp
- Green chili – 3 to 4 chopped
- Spring onion – 2 tbsp
- Ginger – 1 tsp chopped
- Black pepper – 1 pinch
- Fresh coriander – 2 tbsp chopped
- Oil or ghee – for fry
Method:
- Add all dough ingredients in a bowl and make medium soft dough with warm water and set aside.
Preparation for Filling:
- Shred the boil potatoes. Heat up oil in a pan and stir fry fenugreek seeds, mustard seeds, cumin seeds and red crushed chili. Add this in mashed potato.
- Then add turmeric powder, ground coriander seeds, salt, fresh coriander, spring onion, ginger, black pepper and green chili. Mix it well.
- Divide dough and into equal portions.
- Roll out a circle, place sufficient potato stuffing mixture and spread it.
- Then make a slit from one side, roll and make cone shape, press it firmly.
- Roll with light hands, heat up a griddle and cook this paratha from both sides with ghee or oil until crispy and golden.
- Now aloo paratha is ready to serve with curd, pickle or any chutney you like.
