- 1 baguette
- 3 eggs
- Salt, to taste
- Black pepper, to taste
- Chilli flakes, to taste
- Paprika powder, to taste
- Small handful of spring onions, finely chopped

- Grated mozzarella cheese
- Olive oil, for frying

Instructions:
- Slice the baguette into pieces about 1.5–2 cm (½–¾ inch) thick.
- Carefully cut out the center of each slice, leaving a ring of bread.
- In a bowl, whisk together the eggs, salt, black pepper, chilli flakes, and paprika.
- Stir in the spring onions, chopped beef steak, and grated mozzarella cheese.
- Heat a frying pan over medium heat and lightly grease it with olive oil.
- Place the bread rings in the pan.
- Spoon or pour the egg mixture into the center of each bread ring.
- Place the cut-out bread centers on top of the filling if desired.
- Cook for 1–2 minutes, or until the egg begins to set and the bottom is golden brown.
- Carefully flip each toast.
- Cook for another 1–2 minutes, until the bread is crispy and the cheese has melted.
- Remove from the pan and serve warm.
