Ingredients:

  • 1 baguette
  • 3 eggs
  • Salt, to taste
  • Black pepper, to taste
  • Chilli flakes, to taste
  • Paprika powder, to taste
  • Small handful of spring onions, finely chopped
  • Chopped cooked beef steak
  • Grated mozzarella cheese
  • Olive oil, for frying

Instructions:

  1. Slice the baguette into pieces about 1.5–2 cm (½–¾ inch) thick.
  2. Carefully cut out the center of each slice, leaving a ring of bread.
  3. In a bowl, whisk together the eggs, salt, black pepper, chilli flakes, and paprika.
  4. Stir in the spring onions, chopped beef steak, and grated mozzarella cheese.
  5. Heat a frying pan over medium heat and lightly grease it with olive oil.
  6. Place the bread rings in the pan.
  7. Spoon or pour the egg mixture into the center of each bread ring.
  8. Place the cut-out bread centers on top of the filling if desired.
  9. Cook for 1–2 minutes, or until the egg begins to set and the bottom is golden brown.
  10. Carefully flip each toast.
  11. Cook for another 1–2 minutes, until the bread is crispy and the cheese has melted.
  12. Remove from the pan and serve warm.
