Aloo Lachedar Paratha Recipe

Aloo Lachedar Paratha is a delicious, crispy, and flaky stuffed paratha filled with a flavorful potato mixture. The beautiful layers make it extra crispy on the outside while keeping it soft and tasty on the inside. Serve it hot with yogurt, pickle, chutney, or your favorite curry.

Rumali Lachha Paratha Recipe

For the Dough

  • 1½ cups whole wheat flour
  • ½ cup plain flour (all-purpose flour)
  • ½ tsp salt
  • ½ tbsp powdered sugar
  • ¾ cup warm milk, or as needed

For the Potato Stuffing

Coconut Flour Tortillas no Psyllium Husk

  • 2 boiled and mashed potatoes
  • Finely chopped spring onions (green part), as needed
  • Chopped green chillies, to taste
  • 1 tsp cumin seeds
  • 1 tsp salt, or to taste

For Layering and Cooking

  • Ghee, as needed
  • Dry flour, as needed

Instructions:

Prepare the Dough

  1. In a large mixing bowl, combine the whole wheat flour, plain flour, salt, and powdered sugar.
  2. Gradually add the warm milk and knead until you have a soft and pliable dough.
  3. Cover the dough and let it rest for 15–20 minutes.
  4. Once rested, divide the dough into equal-sized balls.

Prepare the Potato Stuffing

  1. While the dough is resting, prepare the potato filling. Add the mashed potatoes, chopped spring onions, green chillies, cumin seeds, and salt to a bowl.
  2. Mix everything thoroughly. Divide the potato mixture into equal portions and shape each portion into a ball. Set aside.

Stuff the Parathas

  1. Take one dough ball and flatten it slightly with your hands. Place one potato stuffing ball in the center.
  2. Bring the edges of the dough together and seal the filling completely inside.
  3. Repeat with the remaining dough and potato filling. Let the stuffed dough balls rest for about 10 minutes.

Create the Lachedar Layers

  1. Take one stuffed dough ball and gently roll it into a thin circle using a rolling pin.
  2. Apply a thin layer of ghee over the surface and sprinkle with a little dry flour.
  3. Fold the dough inward from both sides to form a long cylinder-like shape.
  4. Make a slit lengthwise through the middle and gently open it to expose the layers.
  5. Shape the dough and let it rest for another 10 minutes.
  6. Gently flatten it with your hands, then roll it out again into a round paratha. Avoid making it too thick.

Cook the Paratha

  1. Heat a skillet or tawa over medium heat.
  2. Once the tawa is hot, place the rolled paratha on it.
  3. Cook for about a minute, or until bubbles begin to appear on the surface.
  4. Flip the paratha and cook the other side. Apply a little ghee or oil to both sides.
  5. Continue flipping and cooking until the paratha is crispy and golden brown on both sides.
  6. Remove from the tawa and repeat with the remaining parathas.

Serving Suggestion
