Ingredients for stock

  1. Beef meat – ½ kg
  2. Oil – 1/4 cup
  3. Bay leaf – 1
  4. Black pepper – 5 to 6
  5. Cloves – 2
  6. Star anise – 2
  7. Cumin seeds – 1 tsp
  8. Fennel seeds – 1 tsp
  9. Dry coriander seeds – 1 tbsp
  10. Chopped ginger – 1 tsp
  11. Chopped garlic – 4 cloves
  12. Tomatoes – 2
  13. Onion – 1 sliced
  14. Whole dry red chilies – 5-6
  15. Green chilies – 6-7
  16. Cinnamon stick – 1
  17. Chicken cube – 1
  18. Salt – 1 tsp

Method for stock:

  • Heat up oil in a pan, add mutton, bay leaf, black pepper, cloves, star anis, cumin seeds, fennel seeds, dry coriander seeds, ginger, garlic, tomatoes, onion, 7 to 8 whole dry red chilies, green chilies, cinnamon stick, salt and chicken cubes, fry for 5 to 6 minutes.
  • Then add 7 to 8 cups of water, bring to boil on high flame, then cook on low heat until mutton is tender.
  • When it’s done, take out meat from stock. Strain stock and throw out the masala.

Ingredients for Pulao Masala:

  1. Ghee – 1/3 cup
  2. Green cardamom – 4
  3. Star anise – 2
  4. Black pepper – ½ tsp
  5. Yogurt – 1 cup
  6. Green chilli paste – 1 tbsp
  7. Dried plums 6-7
  8. Chopped ginger – 1 tbsp
  9. Orange juice – 1/3 cup
  10. Chicken cube – 1
  11. Salt – to taste
  12. Rice – ½ kg
  13. Kewra water – 1/2 tsp
  14. Mint leaves – 1/4 cup
  15. Fried onion – 1 cup
How to Make Yakhni Pulao: English – Urdu Recipe

Method:

  • In a separate pan heat up ghee add green cardamom, black pepper and star anise and stir fry. Then add meat and fry well.
  • In a bowl mix yogurt, green chilli paste, dry plums, ginger, chicken cube and orange juice.
  • Add this yogurt mixture in mutton and fry until water dries.
  • Then add stock and bring it to boil than add soaked rice and kewra water, cook on high flame than put it on dum for 10-12 mins.
  • Then add fried onion and mint leaves, mix and serve.
