Dhuwan Dahi Baingan


  1. Baingan (egg plants) – 4 cut in sliced
  2. Yogurt – 1/2 kg
  3. Milk – 1 cup
  4. Sugar – 1 tbsp
  5. Corn flour – 1 tbsp
  6. Black pepper – 1 tsp
  7. Fried cumin seeds – 1 tbsp
  8. Fresh coriander – 1/2 bunch
  9. Mint – 1/2 bunch
  10. Green chilli – 4
  11. Salt – to taste

For Bighar:

  1. Curry leaves – 6
  2. Cumin seeds – 1/2 tsp
  3. Fenugreek seeds – few
  4. Whole red chilli – 4

Fry curry leaves, cumin seeds, fenugreek seeds and whole red chillies in oil and pour on egg plant and yogurt mixture.


  • Take a pan, add oil and fry egg plant slices. Take them out from the oil. Now mix milk, salt, sugar, corn flour, black pepper, fried cumin seeds, fresh coriander, mint and green chili, mix well. Now take a serving dish, place 1 layer of yogurt mixture then fried egg plant, then again yogurt and finally pour bighar. At the end place charcoal on a slice of egg plant and give smoke of charcoal, cover for 2 sec. Serve with boil rice.
