2 Ways to Make Green Chutney

Ingredients:

  1. Onions sliced – 2
  2. Turmeric powder – 1/4 tsp
  3. Red chili powder – 1 tsp
  4. Coriander powder – 1 tsp
  5. Cumin powder – 1 tsp
  6. Amchoor powder – 1/4 tsp
  7. Kasoori methi – 1 tbsp
  8. Gram flour (besan) – 2 tbsp
  9. Green chilies, thinly chopped – 2
  10. Fresh coriander – 1/4 cup

Instructions to prepare the Dough:

Add flour, salt and make dough with warm water. Rest for 15 minutes.

Instructions to Prepare the stuffing for onion paratha:

  • In a bowl, combine the onions, turmeric powder, gram flour, red chilli powder, paprika powder, kasoori methi, coriander powder, amchoor powder, cumin powder, green chilies and fresh coriander. Divide and Roll.
  • After resting, divide the dough into equal-sized balls.
  • Take one dough ball and roll it out into a thin circle (about 6-7 inches in diameter) using a rolling pin and a dusting of flour to prevent sticking.

Layering:

  • Brush the rolled-out circle with ghee or butter.
  • Sprinkle some dry flour over the ghee/butter layer.
  • Spread the stuffing on rolled dough. Cut in stripes.
  • Now, starting from one end, make small pleats like you would for a paper fan or accordion.

Create a Spiral for lachha paratha:

  • After making the pleats, roll them tightly together to form a spiral shape.

Roll Out the Spiral:

  • Flatten the spiral gently with your hands and roll it out again into a circle. Ensure it’s not too thick.

Cooking:

  • Heat a skillet or tawa over medium heat.
  • Once hot, place the rolled-out paratha onto the skillet.
  • Cook for a minute or so until you see bubbles forming on the surface.
  • Flip the paratha and cook the other side, applying a little ghee or oil on both sides, until golden brown spots appear.

Coconut Flour Tortillas No Psyllium Husk

Serve:

  • Remove the paratha from the skillet and place it on a plate.
  • Repeat the process with the remaining dough balls.
  • Serve hot with yogurt, pickle, or any curry of your choice.
