Easy to Make Taftan Sheermal

Taftan is a mildly sweet, leavened bread made with refined flour (maida), yeast, sugar and ghee or butter. It’s soft, slightly chewy, and often flavored with saffron and cardamom. It is traditionally baked in a clay oven (tandoor) but can also be made in a regular oven.

Ingredients to make taftan dough:

- All-purpose flour (maida) – 1 kg
- Milk powder – 1/4 cup
- Ghee – 2 tbsp
- Yeast – 2 tsp
- Sugar – 3 tbsp
- Salt – 1 1/2 tsp
- Baking soda – 1/4 tsp
- Water – 3 cups
- Yogurt wash for glazing
- Sesame seeds or poppy seeds for topping

Method:
- In a bowl, add water, salt, soda and sugar. Mix it well.
- Add milk powder, mix and add flour and yeast, mix well.
- Add solid ghee and knead it well until you have soft dough.
- Set aside until doubled in size.
- Divide the dough according to your choice, normally one taftan made with a 250 gm dough ball.
- Divide and make balls. Let them rest for 5 minutes.
- Roll the dough balls into a circle of 5-6 inches in diameter. Make sure the edges are thick. Press gently on the middle part and prick with a fork or knife.
- Place the flattened dough in the tray.
- Repeat with the remaining dough.
- Apply yogurt wash on taftan to give it a beautiful colour.
- Cook taftan on tawa or hot skillet for 3 to 4 minutes, then place under the preheated grill for 5 minutes until it becomes light brown in colour.
- Remove taftan from the grill, apply some water, when water dries out apply oil or ghee.
- Make sheermal with the same dough as shown in the video.
