Chicken and Brown Rice
Ingredients:
- Brown rice – 1 cup (mug) or 2 cups (measuring cup)
- Water (or broth for extra flavour) – 2 1/2 cup (mug) or 3 cups (measuring cup)
- Salt (optional)
Instructions:
Keto Chicken Tikka Biryani
- In a medium saucepan, combine the brown rice, water, and salt (if using).
- Place the saucepan over medium-high heat and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan with a tight-fitting lid, and let it simmer for about 20 minutes. Avoid lifting the lid during cooking to keep the steam inside.
- After 20 minutes, check the rice. If the water is absorbed and the rice is tender, it’s done. If not, you can add a little more water (if needed) and continue cooking for a few more minutes.
- Once the rice is cooked, remove the saucepan from the heat and let it sit, covered, for 10 minutes. This allows the rice to steam and become fluffier.
- After the resting period, use a fork to fluff the rice gently. Serve hot.
Tips:
For added flavour, you can cook the rice in broth instead of water.
You can also add a tablespoon of butter or oil to the water for a richer taste.
Brown rice can be stored in the refrigerator for up to a week. Reheat it with a little bit of water to restore moisture.
Enjoy your perfectly cooked brown rice!
