Ingredients:

  1. Plain flour (maida) – 1 1/4 cup
  2. Semolina (sooji/rava) – 1/3 cup
  3. Sugar – 1/4 tsp
  4. Salt – 1/4 tsp
  5. Yogurt (curd) – 2 tbsp
  6. Warm milk (as needed)
  7. Oil – for deep frying

Prepare the Dough:

  • In a large mixing bowl, combine the plain flour, semolina, salt and sugar.
  • Add yogurt to the flour mixture. Yogurt helps in making the pooris soft and fluffy.
  • Gradually add warm milk, a little at a time, and knead into a stiff yet pliable dough. The dough should not be too soft but should be smooth and firm.
  • Knead the dough well for a few minutes to ensure it is smooth and elastic. This helps in making the pooris puff up.
  • Cover the dough with a damp cloth and let it rest for about 30 minutes.

Rolling the Pooris:

  • Divide the dough into 7 equal-sized balls (about the size of a golf ball), apply oil and give them rest for 10 minutes.
  • Roll each ball into a smooth ball with your hands, then flatten slightly.
  • Lightly grease your rolling pin and surface instead of dusting with flour. This prevents the pooris from absorbing excess oil during frying.
  • Roll out each ball into a small circle (about 3-4 inches in diameter). Ensure the thickness is even and slightly thicker than chapatis.

Frying the Pooris:

  • Heat oil in a deep frying pan over medium-high heat. The oil should be hot enough that when you drop a small piece of dough in, it rises immediately.
  • Carefully slide one poori into the hot oil. It should puff up quickly. Gently press down with a slotted spoon to help it puff fully.
  • Flip the poori and fry until golden brown on both sides, which should take about 30 seconds to a minute per side.
  • Remove the poori with a slotted spoon and place it on paper towels to drain excess oil.

Serving:

Serve the pooris hot with your favorite side dishes like aloo sabzi, chana masala, halwa or kheer.
