Low Fat Dry Fruit Cake

Ingredients:

  1. Red flour or chapatti flour – ½ kg
  2. Brown sugar – 1 cup
  3. Eggs – 4
  4. Oil – ½ cup
  5. Roughly chopped Almond – ¼ cup
  6. Baking powder – 1 tbsp
  7. Raisins – ¼ cup
  8. Walnuts – ¼ cup
  9. Black currants – ¼ cup
  10. Vanilla essence
  11. Salt – ¼ tsp
  12. Yellow food colour – 1 pinch

Method:

  • Beat oil and sugar well, during beating add eggs 1 by 1 and vanilla essence.
  • Beat until sugar dissolves. Strain flour, salt and baking powder and add in egg mixture, mix well.
  • Then add dry fruits and mix well.
  • Take 2 loaf cake pans and pour this mixture, bake on 180 degree centigrade and gas mark 4, for 40 to 45 minutes.Low Fat Dry Fruit Cake
