Kachay Gosht Ki Mutton Biryani

Ingredients for marination:

  1. Mutton – 750g
  2. Yogurt – 375g
  3. Turmeric powder – 1 tsp
  4. Red chilli powder – 2 tsp
  5. Coriander powder – 1 tsp
  6. Salt – to taste
  7. Ginger garlic paste – 1 tbsp
  8. Papaya paste – 2 tbsp
  9. Fried cumin seeds – 1 tsp
  10. Fried brown onion – 3
  11. Whole garam masala – 1 tbsp (clove, cumin seeds, cinnamon stick, bay leaf, nutmeg and mace)

Apply above ingredients on mutton and leave for at least 3 hours.

Ingredients for garnishing:

  1. Boiled rice – ½ kg
  2. Lemon in slices – 4
  3. Tomato in slices – 2
  4. Kewra water – 1 tbsp
  5. Milk – ½ cup
  6. Oil – 1 cup
  7. Mint and fresh coriander – 4 tbsp chopped
  8. Green chillies – 6 chopped
  9. Orange food colour – few drops

Method:

  • After 3 hours, take a pan, put oil in it and heat it up.
  • Then add marinated mutton, and then spread lemon slices, then green chillies, mint, coriander, tomatoes, boiled rice, milk (mix food colour) and kewra water.
  • Cover nicely and put on dum on high heat until it evaporates, then put on low heat at least 30 minutes. Serve with salad and yogurt dip.
