Ingredients:
- Mutton β 1/2 kg
- Karela or bitter gourd β 1/2 kg
- Onions β 2 big size, chopped
- Ginger – 1 tbsp chopped
- Garlic cloves β 2 to 3 chopped
- Red chilli powder β 1/2 tsp
- Red chilli flakes – 1 tsp
- Crushed cumin seeds – 1/2 tsp
- Turmeric β 1/4 tsp
- Salt β 1/2 tsp or to taste
- Oil – 1/2 cup total or less
- Tomato β 1 big or 2 small chopped
- Onion – 1 chopped
- Green chillies – 2 to 3 chopped
- Fresh coriander – 2 tbsp chopped

Method:
- In a pan, add mutton, onion, ginger garlic along with seasoning and water. Cook on medium heat until mutton is tender and the water dries.
- Cut the bitter gourd, sliced and sprinkle with salt and set aside for about half an hour.
- Then rinse and squeeze as much water as possible.
- Heat some oil and fry the bitter gourd to a golden brown.
- Drain the oil in cooked mutton and set aside.
- Now add more oil in mutton if needed and fry well.
- Add the fried onions, tomato, fried bitter gourd and green chillies, cover and cook gently for another five minutes.
- Garnish with chopped green chillies and fresh coriander.
- Serve with naan or chapattis.
