Kashmiri Pulao Authentic Recipe
Ingredients:
- Chicken – leg pieces 4 to 5
- Yogurt – 2 cups
- Red chili powder – 1 tsp
- Coriander powder – 1 tbsp
- Nutmeg – 1 pinch
- Mace powder – 1 pinch
- Clove powder – 1 pinch
- Whole cumin seeds – 1 tbsp
- Salt – 1 tsp
- Ghee – 2 to 3 tbsp
- Chopped onion – 4 tbsp
- Black pepper – 15
- Cinnamon sticks – 2
- Green cardamoms – 5
- Raisins – 1 tbsp
- Ginger flakes – 1 tbsp
- Rice – 1/2 kg

Method:
- Mix yogurt, red chili powder, coriander powder, nutmeg, mace powder, clove powder, whole cumin seeds and salt, mix and apply on chicken and leave for an hour.
- Take a pan, heat up ghee and saute onion along with black pepper, cinnamon sticks and green cardamom.
- Then add marinated chicken and cook on high flame for about 6 to 7 minutes, cover and cook until chicken is tender.
- Then add water according to rice, raisins and ginger flakes, bring to boil and add soaked rice.
- Cook until water dries, pour 1 to 2 tbsp oil on rice and put on dum for 15 to 20 minutes.
