How to Make BBQ Raita in Urdu – English

Ingredients for Mutton Marination:

  1. Mutton meat – 1 kg
  2. Ground Fennel seeds – 1 tbsp
  3. Ground Coriander seeds – 2 tbsp
  4. Ground Cumin seeds – 1 tbsp
  5. Salt – to taste
  6. Ginger garlic paste – 2 tbsp
  7. Yogurt – 4 tbsp
  8. Bay leaf – 1
  9. Star anise – 1
  10. Big cardamoms – 3
  11. Clove – 4
  12. Black pepper – 1 tsp
  13. Cinnamon sticks -2
  14. Green cardamoms – 4

Method to marinate mutton:

  • Add all above ingredients in a bowl along with meat and marinate for 1 hour or overnight.
  • Then cook with some water until mutton is tender.

Ingredients for Pulao:

  1. Desi ghee – 2 tbsp
  2. Oil – 2 tbsp
  3. Sliced onion – 2
  4. Ginger garlic paste – 1 tbsp
  5. Sliced tomato –1
  6. Fresh coriander – 2 tbsp
  7. Green chilies – 3
  8. Rice – 500 gm

Method to cook mutton pulao in 1 minute:

  • Heat up ghee and oil in a pan. Fry sliced onion until golden brown, and then add mutton, ginger garlic paste, and fry it well.
  • Add yogurt and cook until water dries. Add sliced tomatoes, fresh coriander and green chilies. Fry for 1 minute.
  • Add soaked rice and mutton stock or add water if required.
  • Cover and let it cook until water dries, then add fresh coriander and fried onion.
  • Cook on dum for 20 minutes.
  • Serve with salad and raita.
