Ingredients for Mutton Marination:
- Mutton meat – 1 kg
- Ground Fennel seeds – 1 tbsp
- Ground Coriander seeds – 2 tbsp
- Ground Cumin seeds – 1 tbsp
- Salt – to taste
- Ginger garlic paste – 2 tbsp
- Yogurt – 4 tbsp
- Bay leaf – 1
- Star anise – 1
- Big cardamoms – 3
- Clove – 4
- Black pepper – 1 tsp
- Cinnamon sticks -2
- Green cardamoms – 4

Method to marinate mutton:
- Add all above ingredients in a bowl along with meat and marinate for 1 hour or overnight.
- Then cook with some water until mutton is tender.
Ingredients for Pulao:
- Desi ghee – 2 tbsp
- Oil – 2 tbsp
- Sliced onion – 2
- Ginger garlic paste – 1 tbsp
- Sliced tomato –1
- Fresh coriander – 2 tbsp
- Green chilies – 3
- Rice – 500 gm
Method to cook mutton pulao in 1 minute:
- Heat up ghee and oil in a pan. Fry sliced onion until golden brown, and then add mutton, ginger garlic paste, and fry it well.
- Add yogurt and cook until water dries. Add sliced tomatoes, fresh coriander and green chilies. Fry for 1 minute.
- Add soaked rice and mutton stock or add water if required.
- Cover and let it cook until water dries, then add fresh coriander and fried onion.
- Cook on dum for 20 minutes.
- Serve with salad and raita.
