Ingredients for Vegetable Rice:
- Rice – 2 cup
- Capsicum – ½ cut in julienne
- Carrot – ½ cut in julienne
- Onion – ½ thinly sliced
- Salt – to taste
- Black pepper – 1 tsp
- Tomato – 2 chopped
- Green chillies – 3
- Parsley – ½ bunch
- Spring onion – ½
- Oil – 3 tbsp
Method:
- Take a pan, put oil and sauté onion.
- Then add capsicum and carrots, fry a bit, then add water and cook until it starts boiling.
- Then add salt, black pepper and soaked rice and cook until water dries.
- Then put tomato, green chilli and parsley, cover and put on dum for 8 to 10 minutes.
- Serve with prawns.
Ingredients for Prawns:
- Prawns – 375 g
- Oil – 2 tbsp
- Garlic – 2 clove
- Carrot – ½
- Capsicum – ½
- Spring onion – ½
- Tomato – 1 seedless
- Onion – ½ chopped
- Parsley – ½ bunch
- Salt – to taste
- Black pepper – 1 tsp
Method:
- Take a wok, add oil and chopped garlic, fry until light brown.
- Then add prawns and fry on high heat until it becomes white in colour.
- Then add all vegetables, salt, black pepper and stir fry on high heat (don’t over cook).
- Serve with rice.
