Smashed Avocado Feta Toast
So easy, simple and delicious smashed avocado feta toast, this is perfect when you need a quick and nutritious breakfast or snack. Look for ripe but still firm avocado; use plenty of lemon or lime juice; and don’t mush it all up too much. It’s good to still have itty bits of feta breaking up the rich creaminess of the avocado.
Smashed Avocado Feta Toast

Ingredients:
- Ripe avocado – 1 halved and stoned
- Red crushed chili – 1 pinch
- Mint leaves – 1 tbsp chopped
- Small garlic clove – 1/2 finely grated
- Extra virgin olive oil – 2 tbsp
- Lime or lemon juice – 1 tbsp
- Feta cheese – 100 gm crumbled
- Half red onion – finely sliced
- Cherry tomatoes – 100 gm halved
- Thick slices toast – 2
- Sea salt
- Black pepper

Method:
- Roughly chop the avocado and place in a bowl with red crushed chilli, mint, garlic, oil, lime or lemon juice, salt and pepper.
- Smash roughly with a fork, then lightly toss crumbled feta in this mixture.
- Then place on to hot toast (buttered or brushed with extra-virgin olive oil), and scatter with remaining feta and extra mint.
- Now toss the cherry tomatoes and finely sliced onion with extra-virgin olive oil, sea salt and pepper and serve alongside.
