Ingredients:
- Boiled and mashed potato – 1
- Eggs – 2
- Salt – to taste
- Red chilli powder – 1/4 tsp
- Dry parsley- 1/2 tsp

- Bread slices – 2
- Chopped onion – 2 tbsp
- Chopped tomato – 2 tbsp
- Chopped fresh coriander – 1 tbsp
- Oil – 1/2 tbsp
- Salt – to taste
- Red chilli flakes – 1/2 tsp
- Curry powder – 1/2 tsp
- Tomato ketchup – 1/2 tbsp
- Mayonnaise – 1/2 tbsp
- Mozzarella cheese – as desired
- Red chilli flakes – 1 pinch
Method:
- Boil and mash the potato, then set aside.
- Lightly beat two eggs. Add salt, red chilli powder and dry parsley, and set aside.
- Toast the bread slices from both sides with butter.
- Sauté onion, tomato, fresh coriander, add salt, red chilli flakes and curry powder. Stir well.
- Add mashed potatoes and mix well. Let it cool down completely.
- Now apply tomato ketchup and mayonnaise on one slice of bread, add potato mix and mozzarella
cheese. Sprinkle red chilli flakes and close the sandwich with the 2nd slice of bread. - Now heat up butter in the same pan and pour the half beaten eggs mixture and wrap the
sandwich as shown in the video. - Now lift the wrapped sandwich, pour the remaining egg mixture in the pan and place the
sandwich and wrap the sandwich as before. - Cook from all sides of the sandwich until it turns golden.
- Cut in 4 slices and serve this delicious breakfast sandwich with ketchup, or as it is with tea or
