Strawberry Jam Tarts

Ingredients for Pastry dough:

  1. Plain flour – 8 ounce
  2. Chilled butter – 4 ounce
  3. Caster sugar – 2 tbsp
  4. Cold water – 3 to 4 tbsp

Ingredients For Filling:

  1. Cream cheese – 8 ounce
  2. Lemon juice – 1 tsp
  3. Ground sugar – 2 tbsp
  4. Fruit cocktail or fresh fruit – 1 cup
  5. Apricot jam – as required (to glaze)

Method:

  • For the pastry, in flour, add butter; rub it in until the mixture resembles breadcrumbs.
  • Add in sugar and enough cold water to bind to pliable dough.
  • Wrap and chill for 30 minutes.
  • On a lightly floured surface, roll out dough as thinly as possible, with the help of butter paper, and using a pastry cutter, cut in rounds.
  • Press the rounds in a tartlet tin, prick, then place butter paper, spread some kidney beans as a weight and bake at 200º C for 10 minutes.
  • Then remove butter paper and kidney beans, before again baking until it’s light golden.
  • Let it cool on a wire rack. For the filling, beat cream cheese, sugar and lemon juice, divide it between the tartlets and arrange fruit over.
  • Melt apricot jam and sieve it. Brush over the fruits and serve immediately.

Ingredients:

  1. Prawn – 1/2 kg
  2. Mayonnaise – 1 cup
  3. Ketchup – 1/4 cup
  4. Tabasco – 1/2 tsp
  5. Chili garlic sauce – 1 tbsp
  6. Cream 1 tbsp
  7. Salt – 1/4 tsp
  8. Crushed red pepper – 1/2 tsp
  9. Lemon juice – 1 tbsp
  10. Chopped Ice berg – half

Method:

  1. Take a pan, add water and bring to boil, then add lemon slices and prawns and cook for 1 to 2 minutes.
  2. Then drain water and roughly chop prawns (reserve for garnishing).
  3. Then take a bowl, add mayonnise, cream, tomato ketchup, tobasco sauce, chili garlic sauce, salt, red crushed chili and lemon
  4. juice, mix and add chopped prawns.
  5. Now place lemon slices for single serving glasses, then place chopped ice burg and then put prawns mixture on top.
  6. Garnish with whole prawns and lemon slices.
  7. serve cold.
