Zaatar Bread
Ingredients:
- Flour – 3 cup
- Instant yeast – 1 tbsp
- Sugar – 1 tsp
- Salt – ¾ tsp
- Olive oil – 6 tbsp
- Sesame seeds – 2 tbsp
- Fresh coriander – 2 tbsp
- Zaatar – as required
Zataar masala:
- Thyme – 1 tsp
- Oregano – 1 tsp
- Basil – 1 tsp
- Cumin seeds – 1 tsp
Mix and store in airtight container.
Method:
In a small bowl mix the yeast, the sugar and ¼ cup warm water. Let the yeast mixture sit for 10 – 12 minutes. Mix the flour and salt in a big bowl and add to the fermented yeast mixture. Start to knead the mixture into dough, continue to knead the dough for about 8 minutes, until it turns into a firm, elastic dough.
Form the dough into a ball, and cover the bowl with a towel. Let the dough rise for 1 hour, and then knead it for 2 minutes. Divide the dough into balls. Cover the dough balls with a towel. Roll out each ball gently with a rolling-pin until it is about ¼ inch thick, and about 7 inches in diameter.
Line baking trays with parchment paper, and lightly grease with olive oil. Arrange as many pitas on each tray as possible. Make a small ridge around the perimeter of each dough circle. Stab each pita in a few spots with a fork. Then mix sesame seeds and fresh chopped coriander in zaatar masala. Apply olive oil with brush then sprinkle about 3 tbsp of zaatar masala and bake in preheated oven on 400 degree and gas mark 5.When done apply olive oil on sides and serve.
