Shawarma is an arabic food, traditionally served wrapped in a flatbread such as pita or chapatie as a sandwich, but shawarma platter is served in a plate with rice or french fries, salad, pita bread and sauces. This fast-food is not only in Middle East but also in Europe, Canada and Australia. Seasoned meat in the shape of an inverted cone is turned slowly against a vertical rotisserie, then sliced vertically into thin, crisp shavings. On the sandwich version, the meat is generally served with tomato, onion with sumac, pickled cucumber and chili. We do not have that kind of facility to cook exactly like restaurant but we can cook in a pan or oven and enjoy chicken shawarma platter recipe at home, for shawarma platter you need:

 

  1. Arabic Rice
  2. French fries
  3. Cooked chicken
  4. Salad
  5. Hummus Sauce
  6. Ginger Sauce
  7. Pitta Bread

Ingredients for chicken:

  1. Chicken boneless – 1/2 kg (cut in julienne )
  2. Yogurt – 2 tbsp
  3. Tandoori masala – 1 ½ tsp
  4. Garlic paste – 1 tsp
  5. Red chili powder – 1 tsp
  6. Cumin powder – 1 tsp
  7. Turmeric powder – ½ tsp
  8. Cinnamon powder – 1/4 tsp
  9. Black pepper – ½ tsp
  10. Salt – ½ tsp
  11. Olive oil – 1/4 cup

Method:

  • Take a bowl and marinate chicken with all above ingredients and leave for 15 to 20 minutes.
  • Then bake in preheated oven on 180ºC for 15 to 20 minutes.

Ingredients for Arabic Rice:

  1. Half boiled rice – 1/2 kg
  2. Olive oil – 1/2 cup
  3. Cinnamon stick – 1
  4. Clove – 2
  5. Green cardamoms – 2
  6. Cumin seeds – 1 tsp
  7. Chicken stock – 1 cup
  8. Turmeric powder – 1/4 tsp
  9. Cinnamon powder – 1/4 tsp
  10. Green cardamom powder – 1/4 tsp

Method:

  • Take a pan, add oil, cinnamon stick, clove, green cardamoms and cumin seeds, stir fry for 5 sceonds.
  • Then add chicken stock, turmeric, cinnamon powder, salt and green cardamom powder, bring to boil.
  • Then add boiled rice and cook until water dries.
  • Then cover and put on dum for 10 minutes.
