Ingredients:
Flour – 1 ½ cup
Eggs – 3
Baking powder – 2 ½ tsp
Carrots – 2 medium (grated)
Nuts – ¾ cup
Oil – 1 cup
Brown sugar – 1 ¼ cup
Salt – 1 pinch
Soda – 1 tsp
Cinnamon powder – 2 tsp
Method:
Take  a bowl and put brown sugar, eggs, salt and oil and mix well with a spoon, then take another bowl and put flour, baking powder, soda and cinnamon powder and mix well, and mix it with the egg mixture with a spoon, then with an electric mixer. Now add nuts and grated carrots and mix with spoon. Put the mixture in a cake pan and bake in preheated oven on gas mark 4, 180ºC, 350ºF for 42 to 45 minutes. When it’s done baking, let it cool down before applying the icing.
Icing for cake:
Icing sugar – 1 ½ cup
Butter – as required
Milk – as required
Take a bowl and mix all 3 things. Make sure you put milk gradually, check consistency for icing. Apply on cake and enjoy.
