Ingredients:

  1. Flour – 1 ½ cup
  2. Eggs – 3
  3. Baking powder – 2 ½ tsp
  4. Carrots – 2 medium (grated)
  5. Nuts – ¾ cup
  6. Oil – 1 cup
  7. Brown sugar – 1 ¼ cup
  8. Salt – 1 pinch
  9. Soda – 1 tsp
  10. Cinnamon powder – 2 tsp

Method:

  • Take  a bowl and put brown sugar, eggs, salt and oil and mix well with a spoon.
  • Then take another bowl and put flour, baking powder, soda and cinnamon powder and mix well, and mix it with the egg mixture with a spoon, then with an electric mixer.
  • Now add nuts and grated carrots and mix with spoon.
  • Put the mixture in a cake pan and bake in preheated oven on gas mark 4, 180ºC, 350ºF for 42 to 45 minutes.
  • When it’s done baking, let it cool down before applying the icing.

Icing for cake:

  1. Icing sugar – 1 ½ cup
  2. Butter – as required
  3. Milk – as required
  • Take a bowl and mix all 3 things.
  • Make sure you put milk gradually, check consistency for icing.
  • Apply on cake and enjoy.
