Kashmiri Pulao Authentic Recipe

Ingredients:

  1. Chicken – leg pieces 4 to 5
  2. Yogurt – 2 cups
  3. Red chili powder – 1 tsp
  4. Coriander powder – 1 tbsp
  5. Nutmeg – 1 pinch
  6. Mace powder – 1 pinch
  7. Clove powder – 1 pinch
  8. Whole cumin seeds – 1 tbsp
  9. Salt – 1 tsp
  10. Ghee – 2 to 3 tbsp
  11. Chopped onion – 4 tbsp
  12. Black pepper – 15
  13. Cinnamon sticks – 2
  14. Green cardamoms – 5
  15. Raisins – 1 tbsp
  16. Ginger flakes – 1 tbsp
  17. Rice – 1/2 kg

Method:

  • Mix yogurt, red chili powder, coriander powder, nutmeg, mace powder, clove powder, whole cumin seeds and salt, mix and apply on chicken and leave for an hour.
  • Take a pan, heat up ghee and saute onion along with black pepper, cinnamon sticks and green cardamom.
  • Then add marinated chicken and cook on high flame for about 6 to 7 minutes, cover and cook until chicken is tender.
  • Then add water according to rice, raisins and ginger flakes, bring to boil and add soaked rice.
  • Cook until water dries, pour 1 to 2 tbsp oil on rice and put on dum for 15 to 20 minutes.
