Afghani Beef Tikka Recipe
Ingredients for Stock:
- Beef, mutton or chicken – 1 1/2 kg
- Onion – 2 big size (roughly chopped)
- Garlic – 5 cloves
- Whole coriander – 2 tbsp
- Fennel seeds – 2 tbsp
- Salt to taste
Method for Stock:
- In a pan add beef, chicken or mutton, onion, garlic cloves, in a muslin cloth add fennel seeds, dry coriander, tie well. Add this packet in meat along with 1 tsp of salt and 3 to 4 cups of water, let it cook and make stock.
- When stock is done, strain stock and reserve onion and garlic, make paste and set a side. Discard muslin cloth packet.
Ingredients for Pulao:
Spicy Yakhni Pulao: English – Urdu Recipe
- Oil – 1/2 cup
- Soaked rice 1 kg
- Finely sliced onion – 1 cup
- Whole garam masala – 1 tbsp
- Food color – as required
- Biryani essence – few drops
Method for Pulao:
- In a separate pan, heat up oil, fry sliced onion until light golden brown, add 1 tbsp whole garam masala, and fry for 5 seconds, then add yogurt mixture and onion and garlic paste and fry well.
- Now add meat fry well. Then add stock, mix and bring to boil.
- Then add soaked rice and cook until half water dries.
- Then add lemon slices, fresh coriander, 2 tbsp, mint leaves 2 tbsp, cook till water dries.
- Now add food color, few drops of biryani essence and fried onion and put on dum for 15 minutes.
Ingredients for Yogurt Mixture:
- Tomato – 3 chopped
- Yogurt – 250 gm
- Ginger paste – 1 tbsp
- Garlic paste – 1 tbsp
- Dry fenugreek leaves – 2 tbsp
- Green chilli paste – 3 tbsp
- Garam masala powder – 1 tbsp
- Chicken powder – 1 tbsp or 1 chicken cube
- Salt – 1 tbsp
- Vinegar – 2 tbsp
How to Prepare Yogurt Mixture:
- In a bowl add yogurt, ginger garlic paste, green chilies paste, fresh coriander, mint, dried fenugreek, vinegar, tomatoes, salt, chicken powder and all spice and mix.
